Shepherd’s pie

Here’s a classic, hearty recipe for Shepherd’s Pie—a comforting dish with a savory meat filling and creamy mashed potato topping. Traditionally, it’s made with lamb, but ground beef can also be used (that version is sometimes called Cottage Pie).


Ingredients (Serves 4–6)

For the Filling:

  • 1 lb (450 g) ground lamb (or beef)
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup beef or lamb broth
  • Salt and pepper to taste
  • 1–2 tablespoons flour (optional, for thickening)

For the Mashed Potato Topping:

  • 4 cups peeled and chopped potatoes
  • 1/4 cup butter
  • 1/2 cup milk or cream
  • Salt and pepper to taste

Instructions

1. Make the Mashed Potatoes:

  1. Boil potatoes in salted water until tender (about 15–20 minutes).
  2. Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.

2. Prepare the Filling:

  1. Heat a skillet over medium heat, brown the ground lamb until cooked through. Drain excess fat.
  2. Add onions, carrots, and celery. Cook until softened (~5 minutes).
  3. Stir in garlic, tomato paste, Worcestershire sauce, thyme, and rosemary. Cook 1–2 minutes.
  4. Add broth and peas, simmer until slightly thickened. Sprinkle in flour if needed for extra thickness. Season with salt and pepper.

3. Assemble the Shepherd’s Pie:

  1. Preheat oven to 400°F (200°C).
  2. Spoon the meat and vegetable mixture into a baking dish.
  3. Spread the mashed potatoes evenly on top, using a fork to create a ridged pattern (helps browning).

4. Bake:

  • Bake for 20–25 minutes until the top is golden and the filling is bubbly.
  • Optional: broil for 2–3 minutes to get a crispier top.

5. Serve:

  • Let it cool for 5 minutes before serving. Perfect with a simple green salad or steamed vegetables.

💡 Tips for Extra Flavor:

  • Mix in a little grated cheese (Cheddar or Parmesan) into the mashed potato topping.
  • Add a splash of red wine to the filling while simmering for deeper flavor.
  • Use a mix of root vegetables (parsnips or turnips) for more texture.
