Here’s a tasty and healthy recipe for Aronia Blueberry Oatmeal Squares, combining antioxidant-rich aronia berries, blueberries, and hearty oats into a chewy, sweet snack or breakfast bar:


Ingredients (makes ~12 squares)

Dry Ingredients:

  • 1 ½ cups rolled oats
  • ½ cup whole wheat flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon

Wet Ingredients:

  • ½ cup honey or maple syrup
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract

Fruit Filling:

  • ½ cup aronia berries (fresh or frozen)
  • ½ cup blueberries (fresh or frozen)
  • 2 tbsp honey or maple syrup
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat Oven:
    • 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. Prepare Fruit Filling:
    • In a small saucepan, combine aronia berries, blueberries, honey, and cornstarch.
    • Cook over medium heat for 5–7 minutes until thickened. Let cool slightly.
  3. Make Oat Base & Topping:
    • In a bowl, mix oats, flour, baking powder, salt, and cinnamon.
    • Add honey, melted coconut oil, and vanilla. Stir until mixture is crumbly but holds together when pressed.
  4. Assemble:
    • Press half of the oat mixture into the bottom of the pan to form a firm base.
    • Spread the berry filling evenly over the base.
    • Sprinkle the remaining oat mixture on top, gently pressing.
  5. Bake:
    • 25–30 minutes, until golden brown on top.
  6. Cool & Slice:
    • Let cool completely in the pan before cutting into squares.

Tips

  • Storage: Keep in an airtight container at room temperature for 3–4 days or refrigerate up to a week.
  • Variations: Add chopped nuts (almonds, walnuts) or seeds (chia, flax) for extra crunch.
  • Sweetener Adjustments: Aronia berries are tart, so adjust honey/maple syrup to taste.
