Here’s a simple and delicious recipe using egg yolks: a classic Creamy Egg Yolk Pasta Sauce. It’s rich, silky, and super quick to make.


Creamy Egg Yolk Pasta

Ingredients (for 2 servings):

  • 2 egg yolks
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream (optional for extra creaminess)
  • 200 g pasta (spaghetti or fettuccine)
  • 1 tbsp butter
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Cook pasta in salted boiling water until al dente. Reserve 1/4 cup pasta water.
  2. In a small bowl, whisk together egg yolks, Parmesan, and cream until smooth.
  3. In a skillet, melt butter over medium heat and sauté garlic for 1 minute (don’t brown it).
  4. Drain pasta and add it to the skillet. Remove from heat.
  5. Quickly pour the egg yolk mixture over the pasta, tossing constantly. Add reserved pasta water little by little to create a silky sauce.
  6. Season with salt and black pepper. Garnish with parsley and extra Parmesan.
  7. Serve immediately.
