🇸🇪 Swedish Meatball Noodle Bake

A cozy, family-friendly casserole inspired by classic Swedish meatballs — creamy, savory, and perfect for weeknights.


🛒 Ingredients

For the meatballs:

  • 1 lb ground beef
  • ½ lb ground pork (or use all beef)
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 egg
  • ¼ cup finely chopped onion
  • ½ tsp garlic powder
  • ½ tsp allspice
  • ¼ tsp nutmeg
  • Salt & black pepper to taste

For the casserole:

  • 12 oz egg noodles
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups beef broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tbsp Worcestershire sauce
  • 1 cup sour cream
  • 1–1½ cups shredded mozzarella or Swiss cheese
  • 2 tbsp chopped fresh parsley (optional)

👩‍🍳 Instructions

1️⃣ Make the Meatballs

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, combine breadcrumbs and milk. Let soak 2–3 minutes.
  3. Add beef, pork, egg, onion, garlic powder, allspice, nutmeg, salt, and pepper. Mix gently.
  4. Roll into 1-inch meatballs and place on a lined baking sheet.
  5. Bake 15–18 minutes until browned and cooked through.

2️⃣ Cook the Noodles

  • Boil egg noodles in salted water until al dente. Drain and set aside.

3️⃣ Make the Cream Sauce

  1. Melt butter in a large skillet over medium heat.
  2. Whisk in flour and cook 1 minute.
  3. Slowly whisk in beef broth and cream.
  4. Add Worcestershire sauce and simmer until thickened (5–7 minutes).
  5. Stir in sour cream. Adjust salt and pepper.

4️⃣ Assemble & Bake

  1. Reduce oven to 375°F (190°C).
  2. In a large baking dish, combine noodles, meatballs, and sauce.
  3. Sprinkle cheese evenly on top.
  4. Bake 20–25 minutes until bubbly and golden.
  5. Garnish with parsley before serving.

⭐ Optional Add-Ins

  • Sautéed mushrooms
  • Caramelized onions
  • A sprinkle of grated Parmesan
  • Frozen peas (stir into sauce before baking)
