surimi salad

Here’s a fresh and easy surimi salad (imitation crab salad) that’s creamy, slightly sweet, and perfect for sandwiches or lettuce wraps.


🥗 Surimi (Imitation Crab) Salad

Ingredients (serves 4)

  • 12 oz surimi (imitation crab sticks or flakes), chopped
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 cup celery, finely diced
  • 2 tablespoons red onion, very finely minced
  • 1 tablespoon fresh parsley (optional)
  • Salt and black pepper, to taste
  • Optional: 1 teaspoon Dijon mustard or a pinch of sugar

Instructions

  1. Prepare the surimi: If using sticks, slice lengthwise and chop into bite-sized pieces.
  2. In a bowl, combine mayonnaise, lemon juice, salt, and pepper.
  3. Add surimi, celery, onion, and parsley. Gently mix until evenly coated.
  4. Taste and adjust seasoning. Chill for at least 30 minutes before serving for best flavor.

Serving Ideas

  • On buttery croissants or sandwich bread
  • Stuffed into avocados
  • Over mixed greens as a light salad
  • In sushi rolls or wraps

Optional Add-Ins

  • Diced cucumber for extra crunch
  • A splash of rice vinegar for brightness
  • A little sriracha for heat
  • Chopped hard-boiled egg for richness
