  • 2–3 lb pork loin
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 large onion, sliced

Instructions

  1. Prepare the Pork Loin
    • Pat the pork loin dry and season generously with salt, pepper, paprika, and thyme.
    • Optional: Sear the pork in a skillet with olive oil over medium-high heat for 2–3 minutes per side for extra flavor.
  2. Layer the Slow Cooker
    • Place sliced onions at the bottom of the slow cooker.
    • Add any optional vegetables like carrots or potatoes.
    • Place the pork loin on top.
  3. Make the Sauce
    • In a small bowl, mix the minced garlic, broth, soy sauce (or Worcestershire), mustard, and honey.
    • Pour over the pork loin.
  4. Cook
    • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the internal temperature reaches 145°F (63°C).
  5. Finish and Serve
    • Remove the pork and let it rest for 10 minutes before slicing.
    • Optional: Pour the juices into a saucepan, simmer to thicken, and use as a sauce.

Tips for Best Results

  • Don’t overcook – pork loin can dry out if cooked too long.
  • Add vegetables later if you want them firmer.
  • Searing adds flavor but is optional if you’re short on time.
