Slow Cooker Chicken Thighs

Here’s a simple and flavorful Slow Cooker Chicken Thighs recipe that yields tender, juicy chicken every time:


Ingredients (Serves 4)

  • 6–8 bone-in, skinless chicken thighs
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • Optional: 1 teaspoon dried thyme or rosemary

Instructions

  1. Prepare the slow cooker:
    Place the sliced onions at the bottom of the slow cooker. This prevents the chicken from sticking and adds flavor.
  2. Make the sauce:
    In a small bowl, mix together the chicken broth, soy sauce, honey, Dijon mustard, garlic, paprika, salt, and pepper.
  3. Add the chicken:
    Place the chicken thighs on top of the onions. Pour the sauce over the chicken, making sure each piece is coated.
  4. Cook:
    • Low: 6–7 hours
    • High: 3–4 hours
      Chicken should be tender and easily pull apart with a fork.
  5. Optional – thicken the sauce:
    Remove the chicken, pour the sauce into a small saucepan, and simmer on the stove for 5–10 minutes. You can also stir in 1 teaspoon of cornstarch mixed with 1 tablespoon water to make a thicker glaze.
  6. Serve:
    Serve over rice, mashed potatoes, or roasted vegetables. Spoon some of the sauce over the chicken for extra flavor.

Tips

  • Bone-in chicken thighs stay juicier than boneless.
  • You can add vegetables like carrots or potatoes into the slow cooker for a one-pot meal.
  • For extra flavor, sear the chicken thighs in a pan before adding to the slow cooker—this gives a deeper, caramelized taste.
