Slow Cooker Chicken

Here’s a simple and versatile recipe for Slow Cooker Chicken that you can customize with your favorite flavors:


Ingredients (serves 4)

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup chicken broth
  • 1 onion, sliced
  • 2–3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or rosemary
  • Salt and pepper, to taste
  • Optional: 1 cup chopped vegetables (carrots, potatoes, or bell peppers)

Instructions

  1. Prepare the chicken:
    • Season the chicken with salt, pepper, paprika, and thyme/rosemary.
  2. Layer ingredients in slow cooker:
    • Place the onion and garlic at the bottom of the slow cooker.
    • Add the chicken on top.
    • Pour the chicken broth over everything.
    • Add optional vegetables around the chicken.
  3. Cook:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and fully cooked (internal temperature 165°F / 74°C).
  4. Serve:
    • Remove the chicken and vegetables.
    • Optionally, thicken the cooking liquid into a gravy by simmering with a little cornstarch slurry.

  • You can swap herbs and spices depending on your mood: Italian seasoning, curry powder, or smoked paprika all work well.
  • Slow cooking keeps the chicken juicy and makes it easy to shred for sandwiches, tacos, or salads.
  • Leftovers freeze well for up to 3 months.
