Shepherd’s pie

Here’s a classic, hearty recipe for Shepherd’s Pie—perfect comfort food with a savory meat base and creamy mashed potato topping:


Ingredients

For the Filling:

  • 1 lb (450 g) ground lamb (or beef if you prefer cottage pie)
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef or lamb stock
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

For the Mashed Potato Topping:

  • 2 lbs (900 g) potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/4 cup milk (or cream for extra richness)
  • Salt and pepper, to taste
  • Optional: 1/4 cup grated cheddar cheese

Instructions

1. Prepare the Mashed Potatoes:

  1. Boil potatoes in salted water until tender (about 15–20 minutes).
  2. Drain, mash with butter and milk, season with salt and pepper.
  3. Set aside.

2. Make the Filling:

  1. Heat olive oil in a large skillet over medium heat.
  2. Cook onions, carrots, and celery until soft (~5 minutes).
  3. Add garlic and cook 1 more minute.
  4. Add ground lamb, cook until browned. Drain excess fat.
  5. Stir in tomato paste, stock, Worcestershire sauce, thyme, salt, and pepper.
  6. Simmer for 10 minutes, until thickened slightly.
  7. Fold in frozen peas at the end.

3. Assemble the Pie:

  1. Preheat oven to 400°F (200°C).
  2. Spread meat mixture evenly in a baking dish.
  3. Spoon mashed potatoes on top, spreading evenly.
  4. Optional: sprinkle grated cheddar cheese on top.

4. Bake:

  • Bake for 20–25 minutes, until the top is golden and edges are bubbling.

5. Serve:

  • Let rest 5 minutes before serving.
  • Pairs well with a side salad or steamed vegetables.

💡 Tips for a Perfect Shepherd’s Pie

  • Use lamb for traditional flavor; beef works for “Cottage Pie.”
  • Add a little cornstarch or flour to the filling if you want it extra thick.
  • For creamy topping, use a hand masher or ricer for smooth potatoes.
