Here’s a simple, delicious recipe featuring potatoes and onions that brings out their natural flavors. This works as a side dish or even a light main.


Roasted Potatoes and Onions

Ingredients (serves 4)

  • 4 medium potatoes, peeled or scrubbed and cut into 1-inch cubes
  • 2 medium onions, sliced into thin wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)
  • 1 teaspoon paprika (optional, for color and flavor)
  • Salt and black pepper, to taste
  • Fresh herbs (optional: rosemary, thyme, or parsley)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large mixing bowl, toss the potatoes and onions with olive oil, garlic, paprika, salt, and pepper until evenly coated.
  3. Spread the mixture in a single layer on a baking sheet. Avoid overcrowding to ensure even roasting.
  4. Roast in the oven for 25–35 minutes, flipping halfway through, until potatoes are golden and crispy on the edges, and onions are caramelized.
  5. Remove from oven and garnish with fresh herbs if desired. Serve hot.

Tips

  • For extra flavor, sprinkle a little grated Parmesan over the top during the last 5 minutes of roasting.
  • Adding a splash of balsamic vinegar after roasting gives a sweet tangy finish.
  • Try mixing in bell peppers or carrots for a colorful medley.
