Ingredients

  • 2 tablespoons olive oil

  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary or thyme (or fresh sprigs)
  • Optional: 1 tablespoon Dijon mustard or honey for extra flavor

Instructions

1️⃣ Preheat Oven

  • Preheat oven to 400°F (200°C).

2️⃣ Prepare Pork

  1. Pat the tenderloin dry.
  2. Rub with olive oil, garlic, salt, pepper, and herbs.
  3. Optional: brush with Dijon mustard or honey for a glaze.

3️⃣ Sear (Optional for Extra Flavor)

  • Heat a skillet over medium-high heat and sear pork 2–3 minutes per side until golden brown.

4️⃣ Roast

  • Transfer pork to an oven-safe dish (or leave in skillet if oven-safe).
  • Roast 20–25 minutes, until internal temperature reaches 145°F (63°C).

5️⃣ Rest

  • Let the pork rest 5–10 minutes before slicing.
  • Slice into medallions and serve.

  • Serve with roasted vegetables, mashed potatoes, or a light salad.
  • For extra flavor, deglaze the pan with a splash of chicken broth or white wine to make a quick pan sauce.
