🥧 Pecan Pie Balls (Makes ~24)

Ingredients

For the Filling:

  • 1 cup finely chopped pecans
  • ½ cup brown sugar
  • ¼ cup corn syrup or honey
  • 2 tbsp butter, melted
  • 1 tsp vanilla extract
  • Pinch of salt

For the Coating:

  • 12 oz semi-sweet chocolate (or chocolate chips)
  • Optional: chopped pecans for garnish

Instructions

1️⃣ Prepare the Filling

  1. In a medium bowl, combine chopped pecans, brown sugar, corn syrup, melted butter, vanilla, and salt.
  2. Mix well until sticky and cohesive.
  3. Chill the mixture in the refrigerator for 20–30 minutes to make it easier to shape.

2️⃣ Shape the Balls

  1. Using your hands or a small cookie scoop, roll the mixture into 1-inch balls.
  2. Place on a parchment-lined baking sheet and chill for 10 minutes.

3️⃣ Coat with Chocolate

  1. Melt chocolate in a microwave-safe bowl or over a double boiler.
  2. Using a fork or toothpick, dip each pecan ball into melted chocolate, coating completely.
  3. Place back on the parchment paper.
  4. Optional: sprinkle chopped pecans on top before chocolate sets.

4️⃣ Set & Serve

  • Chill the coated balls in the refrigerator for 30–60 minutes until chocolate hardens.
  • Serve cold or at room temperature.

  • Add texture: Mix in crushed graham crackers or oats into the filling.
