🥧 Pecan Pie Balls (No-Bake)

🍴 Makes: About 18–24 balls

⏱ Total Time: 30 minutes (+ chilling time)


🧂 Ingredients:

  • 1 1/2 cups finely chopped pecans

  • 1 cup graham cracker crumbs (about 8 full sheets, crushed)

  • 1 cup brown sugar, packed

  • 1/4 cup maple syrup or light corn syrup

  • 1/4 cup unsalted butter, melted

  • 1/2 tsp vanilla extract

  • Pinch of salt

For the Chocolate Coating:

  • 8 oz semi-sweet or dark chocolate (chips or bar, melted)

  • Optional: Sea salt or extra chopped pecans for garnish

1. Mix the filling:

In a large bowl, stir together:

  • Chopped pecans

  • Graham cracker crumbs

  • Brown sugar

  • Salt

2. Form into balls:

  • Scoop about 1 tablespoon of the mixture and roll into balls.

  • Place on a parchment-lined baking sheet.

  • Chill in the fridge or freezer for 15–30 minutes to firm up.

3. Dip in chocolate:

  • Melt chocolate in the microwave in 30-second bursts, stirring in between until smooth.

  • Dip each chilled ball into the chocolate using a fork or toothpick.

  • Tap off excess and place back on parchment paper.

4. Optional toppings:

  • Sprinkle a few with sea salt flakes or extra chopped pecans before the chocolate sets.

5. Let set:

  • Allow chocolate to harden at room temp or pop them in the fridge for quicker setting.
