Here’s a cozy and easy Pancake Loaf recipe — it’s like pancakes baked into a soft, sliceable loaf. Great for meal prep or lazy weekend mornings!


🥞 Pancake Loaf

Ingredients:

  • 1½ cups (190 g) all-purpose flour

  • 1 tablespoon baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 2 tablespoons sugar (optional)

  • 1 cup (240 ml) milk (dairy or non-dairy)

  • 2 eggs

  • 2 tablespoons melted butter or oil

  • 1 teaspoon vanilla extract

  • Optional add-ins: blueberries, chocolate chips, cinnamon, banana slices


Instructions:

  1. Preheat oven to 175°C (350°F). Grease or line a loaf pan with parchment paper.

  2. Mix dry ingredients:
    In a bowl, whisk together flour, baking powder, baking soda, salt, and sugar.

  3. Mix wet ingredients:
    In another bowl, whisk milk, eggs, melted butter, and vanilla until combined.

  4. Combine:
    Pour wet into dry and stir until just combined. Don’t overmix. Fold in any add-ins if using.

  5. Bake:
    Pour batter into the loaf pan and bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool & slice:
    Let cool for 10–15 minutes before slicing.


🧈 Serving Suggestions:

  • Drizzle with maple syrup

  • Serve warm with berries or yogurt

  • Toast slices in a pan with butter for a crispy edge
