🍊 Orange Creamsicle Cake (Serves 8–10)

Ingredients

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2–3 tbsp orange juice
  • 1 tsp vanilla extract

Optional Garnish:

  • Orange zest
  • Candied orange slices

Instructions

1️⃣ Prepare the Cake

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla and orange zest.
  5. Alternate adding dry ingredients and milk + orange juice mixture, beginning and ending with dry ingredients. Mix until just combined.
  6. Divide batter evenly between prepared pans and smooth tops.
  7. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pans 10 minutes, then transfer to a wire rack to cool completely.

2️⃣ Make the Frosting

  1. Beat cream cheese and butter until smooth.
  2. Gradually add powdered sugar, mixing until creamy.
  3. Stir in orange juice and vanilla until light and fluffy.

3️⃣ Assemble the Cake

  1. Place one cake layer on a serving plate.
  2. Spread a layer of frosting on top.
  3. Place the second cake layer on top and frost the top and sides.
  4. Garnish with orange zest or candied slices if desired.
