🍫 No-Bake Éclair Cake

A no-bake éclair cake is a layered dessert that tastes like chocolate éclairs but doesn’t require baking. It’s creamy, chocolatey, and made with graham crackers or ladyfingers, pudding, and whipped topping.


🧾 Ingredients (8–10 servings)

  • 1 box graham crackers (or chocolate wafer cookies)
  • 2 boxes (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 tub (8 oz) whipped topping (Cool Whip)
  • 1 can (14 oz) chocolate frosting or chocolate ganache

1️⃣ Prepare the Pudding

  • Whisk pudding mix with cold milk until thickened (about 2 minutes).
  • Fold in half of the whipped topping to make it creamy.

2️⃣ Layer the Cake

  1. In a 9×13 inch pan, arrange a single layer of graham crackers.
  2. Spread half of the pudding mixture over the crackers.
  3. Repeat with another layer of crackers and the remaining pudding.
  4. Top with a final layer of crackers.

3️⃣ Add Chocolate Topping

  • Spread chocolate frosting or ganache evenly on top.

4️⃣ Chill

  • Refrigerate for at least 4 hours or overnight to allow the crackers to soften.

5️⃣ Serve

  • Cut into squares and enjoy chilled.

  • For extra flavor, sprinkle chocolate chips between layers.
  • Use milk chocolate or dark chocolate frosting for different tastes.
  • Let it chill overnight for best texture, so layers set like a classic éclair.
