  3. Slowly pour warm milk into egg mixture while whisking (tempering).
  4. Return mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
  5. Remove from heat and stir in vanilla and butter. Let cool.

3. Assemble the Mille-Feuille

  1. Cut baked puff pastry into even rectangles (usually 3 layers per slice).
  2. Spread a layer of pastry cream on the first layer.
  3. Place the second puff pastry layer on top and repeat with cream.
  4. Top with the final pastry layer.

4. Add Finishing Touches

  • Dust the top with powdered sugar.
  • Optional: drizzle melted chocolate in thin lines and swirl with a toothpick for a marbled effect.

5. Chill and Serve

  • Chill in the fridge for at least 1 hour before slicing to maintain structure.

  • Keep pastry and cream separate until assembly to prevent sogginess.
  • Chill cream before spreading to make it easier to work with.
