Here’s a bold, cheesy, and satisfying Mexican Casserole recipe that’s perfect for busy weeknights or feeding a crowd. It layers seasoned meat, beans, corn, tortillas (or chips), and plenty of cheese — all baked to bubbly, golden perfection.


🇲🇽 Easy Mexican Casserole

🧂 Ingredients:

  • 1 lb ground beef (or ground turkey or chicken)

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) corn, drained

  • 1 can (10 oz) Rotel diced tomatoes with green chilies (or regular diced tomatoes)

  • 1/2 cup salsa (optional for extra kick)

  • 8 small corn tortillas (or 3 cups crushed tortilla chips)

  • 2 cups shredded Mexican cheese blend

  • 1/2 cup sour cream (optional layer or topping)

  • Fresh cilantro, chopped (for garnish)

  • Sliced olives, jalapeños, or green onions (optional toppings)


🔥 Instructions:

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. Cook the meat:

    • In a large skillet over medium heat, cook ground beef and chopped onion until browned.

    • Drain excess fat. Add garlic, taco seasoning, and 2–3 tbsp of water. Stir to coat and simmer 2 minutes.

  3. Add mix-ins:

    • Stir in black beans, corn, Rotel tomatoes, and salsa (if using). Heat through.

  4. Assemble the casserole:

    • Layer 4 tortillas (or half the chips) on the bottom of the dish.

    • Spread half the meat mixture over the tortillas.

    • Sprinkle with 1 cup of cheese.

    • Repeat layers with remaining tortillas, meat, and cheese.

  5. Bake:

    • Cover with foil and bake for 20 minutes.

    • Remove foil and bake another 5–10 minutes until cheese is melted and bubbly.

  6. Serve:

    • Let cool slightly. Top with sour cream, cilantro, and your favorite toppings.

  • Vegetarian: Skip the meat and add more beans or cooked lentils.

  • Spicy: Add diced jalapeños or use pepper jack cheese.

  • Creamy: Mix in sour cream or cream cheese to the meat mixture before baking.
