Harvard beets are a classic sweet-and-sour side dish made with cooked beets in a glossy sauce of sugar, vinegar, and butter. Despite the name, the dish isn’t directly connected to Harvard University; the name likely comes from the deep crimson “Harvard” color.


🧂 Ingredients

  • 2 cups cooked or canned beets (sliced or cubed)
  • ¼ cup sugar
  • 2 tbsp vinegar (apple cider or white)
  • 1 tbsp cornstarch
  • ½ cup beet juice or water
  • 2 tbsp butter
  • Pinch of salt
