🥒 Fresh Cucumber Salad (Light & Refreshing)
Perfect as a quick side dish, especially with grilled meats or spicy food.
Ingredients
- 2 large cucumbers (thinly sliced)
- 1/4 small red onion (very thinly sliced)
- 2 tbsp rice vinegar (or white vinegar)
- 1 tbsp olive oil
- 1 tsp sugar (optional)
- 1/2 tsp salt (or to taste)
- Freshly ground black pepper
- 1–2 tbsp chopped fresh dill (or parsley)
Instructions
- Slice cucumbers thinly (use a mandoline if you have one).
- Salt lightly and let sit 10–15 minutes to draw out excess water. Pat dry if very watery.
- Mix dressing: Whisk vinegar, olive oil, sugar, salt, and pepper.
- Combine: Toss cucumbers and red onion with dressing.
- Finish: Add fresh herbs and chill 15–30 minutes before serving.
Variations
- Creamy version: Add 1/3 cup sour cream or Greek yogurt.
- Asian-style: Add sesame oil, a splash of soy sauce, and sesame seeds.
- Tomato add-in: Mix with cherry tomatoes and feta for a Mediterranean twist.
