Cucumber salad

🥒 Fresh Cucumber Salad (Light & Refreshing)

Perfect as a quick side dish, especially with grilled meats or spicy food.

Ingredients

  • 2 large cucumbers (thinly sliced)
  • 1/4 small red onion (very thinly sliced)
  • 2 tbsp rice vinegar (or white vinegar)
  • 1 tbsp olive oil
  • 1 tsp sugar (optional)
  • 1/2 tsp salt (or to taste)
  • Freshly ground black pepper
  • 1–2 tbsp chopped fresh dill (or parsley)

Instructions

  1. Slice cucumbers thinly (use a mandoline if you have one).
  2. Salt lightly and let sit 10–15 minutes to draw out excess water. Pat dry if very watery.
  3. Mix dressing: Whisk vinegar, olive oil, sugar, salt, and pepper.
  4. Combine: Toss cucumbers and red onion with dressing.
  5. Finish: Add fresh herbs and chill 15–30 minutes before serving.

Variations

  • Creamy version: Add 1/3 cup sour cream or Greek yogurt.
  • Asian-style: Add sesame oil, a splash of soy sauce, and sesame seeds.
  • Tomato add-in: Mix with cherry tomatoes and feta for a Mediterranean twist.
