Crumb cake

Here’s a classic, tender crumb cake with a buttery streusel topping — perfect with coffee or tea ☕🍰.


🍰 Classic Crumb Cake

Ingredients (1 9-inch cake)

For the cake:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream or plain yogurt

For the crumb topping:

  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, cold and cubed

Instructions

  1. Preheat Oven
  • 350°F (175°C). Grease a 9-inch round or square pan.
  1. Make the Crumb Topping
  • In a bowl, mix flour, brown sugar, cinnamon, and salt.
  • Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs. Set aside.
  1. Prepare Cake Batter
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In another bowl, cream butter and sugar until fluffy.
  • Beat in eggs and vanilla.
  • Mix in sour cream.
  • Gradually fold in dry ingredients until just combined.
  1. Assemble
  • Spread batter evenly in the pan.
  • Sprinkle crumb topping generously over the batter.
  1. Bake
  • Bake 40–50 minutes, or until a toothpick in the center comes out clean.
  • Cool slightly before slicing.

🔥 Tips & Variations

  • Add ½ cup chopped nuts (walnuts, pecans) to the crumb topping for crunch.
  • For a fruit twist, swirl in blueberries or chopped apples.
  • Dust the finished cake with powdered sugar for a pretty presentation.
