1/4 cup chopped green onions or chives
-
1/4 cup all-purpose flour (or breadcrumbs)

Salt and black pepper, to taste

Instructions:
-
Mix the ingredients:
In a mixing bowl, combine mashed potatoes, egg, cheese, green onions, flour, and seasoning. Mix until everything is fully incorporated and holds together. -
Shape the cakes:
Form into patties about ½ to ¾ inch thick. If too soft, chill the patties for 15–20 minutes in the fridge to firm up. -
Heat the pan:
In a large skillet, heat 1–2 tablespoons of butter or oil over medium heat. -
Cook:
Fry the potato cakes in batches for 3–4 minutes per side, or until golden brown and crispy. Don’t overcrowd the pan. -
Drain & serve:
Transfer to a paper towel–lined plate to drain any excess oil. Serve hot with sour cream, ranch, or applesauce for dipping.
