Crispy Mashed Potato Cakes are an excellent way to transform leftover mashed potatoes into a golden, savory snack or side dish. Here’s a simple, flavorful recipe that gets those crispy edges just right!


🥔 Crispy Mashed Potato Cakes

Ingredients:

  • 2 cups cold mashed potatoes (leftovers work great!)

  • 1 large egg

  • 1/2 cup shredded cheese (cheddar, Parmesan, or a mix)

  • 1/4 cup chopped green onions or chives

  • 1/4 cup all-purpose flour (or breadcrumbs)

  • Salt and black pepper, to taste

  • Butter or oil, for frying

Optional Add-ins:

  • 1–2 tablespoons sour cream or cream cheese (for extra creaminess)

  • Cooked bacon bits

  • Garlic powder or paprika for seasoning


Instructions:

  1. Mix the ingredients:
    In a mixing bowl, combine mashed potatoes, egg, cheese, green onions, flour, and seasoning. Mix until everything is fully incorporated and holds together.

  2. Shape the cakes:
    Form into patties about ½ to ¾ inch thick. If too soft, chill the patties for 15–20 minutes in the fridge to firm up.

  3. Heat the pan:
    In a large skillet, heat 1–2 tablespoons of butter or oil over medium heat.

  4. Cook:
    Fry the potato cakes in batches for 3–4 minutes per side, or until golden brown and crispy. Don’t overcrowd the pan.

  5. Drain & serve:
    Transfer to a paper towel–lined plate to drain any excess oil. Serve hot with sour cream, ranch, or applesauce for dipping.
