Cranberry Cobbler

Cranberry Cobbler is a warm, baked dessert featuring tart cranberries topped with a sweet biscuit or cake-like topping. It’s especially popular during the holiday season but delicious year-round.

Ingredients (Serves 6–8)

Filling:

  • 3 cups Fresh or Frozen Cranberries
  • 1 cup Sugar (adjust for tartness)
  • 1 tsp Vanilla Extract
  • 1 tbsp Cornstarch (optional, for thickening)

Topping:

  • 1 cup All-Purpose Flour
  • ½ cup Sugar
  • 1 tsp Baking Powder
  • ¼ tsp salt
  • ½ cup Butter, cold and cubed
  • ½ cup Milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare cranberry filling:
    • In a mixing bowl, combine cranberries, sugar, vanilla, and cornstarch.
    • Pour into a greased baking dish.
  3. Make the topping:
    • In another bowl, mix flour, sugar, baking powder, and salt.
    • Cut in butter until the mixture resembles coarse crumbs.
    • Stir in milk until a soft dough forms.
  4. Assemble cobbler:
    • Drop spoonfuls of the dough over the cranberry filling.
    • Do not completely cover—leaving gaps allows the fruit to bubble through.
  5. Bake:
    • 35–40 minutes, or until topping is golden and cranberries are bubbling.
  6. Serve warm:
    • Optional: top with vanilla ice cream or whipped cream.

Tips & Variations

  • Sweeten tart cranberries: Add extra sugar if using very sour berries.
  • Add texture: Mix in chopped nuts or oats to the topping.
  • Spice it up: Add a pinch of cinnamon, nutmeg, or ginger to the topping or filling.
  • Make ahead: Can be assembled and refrigerated a few hours before baking.

💡 Serving idea: Cranberry cobbler pairs beautifully with vanilla ice cream, whipped cream, or a drizzle of cream for a cozy, festive dessert.

I can also make a one-spice, brain-friendly version using turmeric or ginger to boost its health benefits while keeping it delicious.
