Cranberry Cobbler
Cranberry Cobbler is a warm, baked dessert featuring tart cranberries topped with a sweet biscuit or cake-like topping. It’s especially popular during the holiday season but delicious year-round.
Ingredients (Serves 6–8)
Filling:
- 3 cups Fresh or Frozen Cranberries
- 1 cup Sugar (adjust for tartness)
- 1 tsp Vanilla Extract
- 1 tbsp Cornstarch (optional, for thickening)
Topping:
- 1 cup All-Purpose Flour
- ½ cup Sugar
- 1 tsp Baking Powder
- ¼ tsp salt
- ½ cup Butter, cold and cubed
- ½ cup Milk
Instructions
- Preheat oven to 375°F (190°C).
- Prepare cranberry filling:
- In a mixing bowl, combine cranberries, sugar, vanilla, and cornstarch.
- Pour into a greased baking dish.
- Make the topping:
- In another bowl, mix flour, sugar, baking powder, and salt.
- Cut in butter until the mixture resembles coarse crumbs.
- Stir in milk until a soft dough forms.
- Assemble cobbler:
- Drop spoonfuls of the dough over the cranberry filling.
- Do not completely cover—leaving gaps allows the fruit to bubble through.
- Bake:
- 35–40 minutes, or until topping is golden and cranberries are bubbling.
- Serve warm:
- Optional: top with vanilla ice cream or whipped cream.
Tips & Variations
- Sweeten tart cranberries: Add extra sugar if using very sour berries.
- Add texture: Mix in chopped nuts or oats to the topping.
- Spice it up: Add a pinch of cinnamon, nutmeg, or ginger to the topping or filling.
- Make ahead: Can be assembled and refrigerated a few hours before baking.
