🍗 Cranberry Chicken Recipe

Ingredients (Serves 4)

  • Chicken (4 pieces – thighs or breasts)
  • 1 cup cranberry sauce (fresh or canned)
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 small onion (chopped)
  • ½ cup chicken broth
  • 2 tbsp honey (or brown sugar)
  • 1 tbsp soy sauce (optional, for depth)
  • Salt & black pepper to taste
  • 1 tsp dried thyme or rosemary

1. Prepare the Chicken

  • Season chicken with salt and pepper.
  • Heat olive oil in a pan and sear chicken for 3–4 minutes per side until lightly golden. Remove and set aside.

2. Make the Cranberry Sauce

  • In the same pan, sauté onion until soft.
  • Add garlic and cook for 30 seconds.
  • Stir in:
    • Cranberry sauce
    • Chicken broth
    • Honey
    • Soy sauce
    • Thyme/rosemary
  • Mix well and simmer for 3–5 minutes.

3. Cook Together

  • Return chicken to the pan.
  • Spoon sauce over the chicken.
  • Cover and cook on low heat for 20–25 minutes until chicken is fully cooked and tender.

4. Serve

  • Garnish with fresh herbs (optional).
  • Serve with:
    • Rice
    • Mashed potatoes
    • Steamed vegetables

  • Preheat oven to 180°C (350°F)
  • Place chicken in a baking dish
  • Pour sauce over it
  • Bake for 30–40 minutes
