Ingredients (Typical for 24 cookies)

  • 1 box of brownie mix (usually ~18 oz / 510 g)
  • 2 large eggs
  • 1/4 cup (60 ml) vegetable oil or melted butter
  • Optional add-ins: chocolate chips, nuts, or a sprinkle of sea salt

Instructions

  1. Preheat oven:
    • 350°F (175°C)
    • Line a baking sheet with parchment paper or lightly grease
  2. Mix the dough:
    • In a large bowl, combine the brownie mix, eggs, and oil (or melted butter)
    • Stir until fully combined
    • Fold in any optional add-ins like chocolate chips or nuts
  3. Form cookies:
    • Scoop dough using a tablespoon or cookie scoop
    • Place 2 inches apart on the baking sheet
  4. Bake:
    • 10–12 minutes, or until the edges are set but the centers are still slightly soft
    • Cookies will firm up as they cool
  5. Cool and serve:
    • Let cookies cool on the baking sheet for 5 minutes
    • Transfer to a wire rack to cool completely

Tips

  • Chewy texture: Slightly underbake for fudgy centers
  • Crispier cookies: Bake 1–2 minutes longer
  • Flavor variations: Add espresso powder, caramel bits, or peanut butter swirls
  • Storage: Store in an airtight container at room temperature for 3–5 days
