🍑 Classic Peach Cobbler
Ingredients
For the filling:
-
6–8 fresh peaches, peeled, pitted, and sliced (about 6 cups)
(or use 2 cans of sliced peaches in juice, drained, or 1 bag of frozen peaches, thawed) -
3/4 cup granulated sugar
-
1/4 cup brown sugar
-
1/2 tsp ground cinnamon
-
1/4 tsp ground nutmeg
-
1 tsp lemon juice
-
1 tsp vanilla extract
-
2 tsp cornstarch (for thickening)
For the batter:
-
1 cup all-purpose flour
-
1 cup granulated sugar
-
1 tbsp baking powder
-
1/4 tsp salt
-
1 cup milk
-
1/2 cup (1 stick) unsalted butter, melted
Instructions
-
Preheat oven to 375°F (190°C).
-
Prepare the peaches:
-
In a medium saucepan, combine peaches, sugars, cinnamon, nutmeg, lemon juice, vanilla, and cornstarch.
-
Cook over medium heat for 5–7 minutes, stirring occasionally, until the mixture is bubbly and slightly thickened.
-
Remove from heat and set aside.
-
-
Make the batter:
-
In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
-
Stir in the milk until just combined.
-
-
Assemble the cobbler:
-
Pour melted butter into the bottom of a 9×13-inch baking dish.
-
Pour the batter evenly over the butter (do not stir).
-
Spoon the peach mixture evenly over the batter (again, do not stir — it will bake up beautifully layered).
-
-
Bake:
-
Bake for 40–45 minutes, or until the top is golden brown and the batter has risen up around the peaches.
-
-
Cool slightly and serve:
-
Let cool for about 10–15 minutes before serving.
-
Best enjoyed warm with vanilla ice cream or whipped cream.
-
🍽️ Tips:
-
Fresh peaches are best in season, but frozen or canned work great too.
-
For extra texture, sprinkle a little turbinado sugar or cinnamon sugar on top before baking.
-
Want a crispier top? Use slightly less milk (about 3/4 cup).
