Ingredients (for 2 servings):

  • 2 packs of instant ramen noodles (discard seasoning packets or save for later)
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • ½ bell pepper, sliced thin
  • 2–3 green onions, chopped
  • 1–2 cloves garlic, minced
  • 2 tsp soy sauce (or more to taste)
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • Optional: cooked protein (chicken, shrimp, tofu)

Instructions:

  1. Cook the ramen noodles: Boil in water 2–3 minutes until just tender. Drain and set aside.
  2. Stir-fry vegetables: Heat vegetable oil in a pan or wok over medium-high heat. Add garlic, cabbage, carrot, and bell pepper. Stir-fry 3–4 minutes until slightly tender.
  3. Add noodles: Toss the drained ramen into the pan with vegetables.
  4. Season: Add soy sauce and sesame oil. Mix well to coat evenly.
  5. Add protein (optional): Toss in cooked chicken, shrimp, or tofu.
  6. Finish: Sprinkle green onions on top and serve hot.

Tips:

  • For extra crunch, stir-fry noodles separately first to slightly crisp them before adding veggies.
  • Customize with mushrooms, bean sprouts, or a fried egg on top.
  • Adjust seasoning with chili flakes, hoisin sauce, or oyster sauce for more depth.
