🥘 Chicken Broccoli Casserole

Ingredients (serves 4–6)

  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets (fresh or frozen, lightly steamed)
  • 1 cup cooked rice (optional but common in casseroles)
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk
  • 1½ cups shredded cheddar cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste

Topping (optional but recommended):

  • ½ cup breadcrumbs or crushed crackers
  • 2 tbsp melted butter

Instructions

  1. Preheat oven
    • Set oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish.
  2. Mix the casserole
    • In a large bowl combine:
      • Cooked chicken
      • Broccoli
      • Rice (if using)
      • Cream of chicken soup
      • Sour cream
      • Milk
      • 1 cup of the shredded cheese
      • Garlic powder, onion powder, salt, and pepper.
    • Mix until well combined.
  3. Assemble
    • Spread mixture evenly into the baking dish.
    • Sprinkle remaining ½ cup cheese on top.
  4. Add topping (optional)
    • Mix breadcrumbs with melted butter and sprinkle over the casserole.
  5. Bake
    • Bake 30–35 minutes until hot and bubbly and the topping is golden.
  6. Serve
    • Let sit 5 minutes before serving.

💡 Tips

  • Rotisserie chicken works great and saves time.
  • Add mushrooms or onions for extra flavor.
  • Replace rice with pasta or cauliflower rice if preferred.
  • For extra crunch, use crushed buttery crackers instead of breadcrumbs.
