🍗 Slow Cooker Chicken & Onions (Tender, Savory, Easy)
A simple, comforting dish with rich onion flavor and juicy chicken — perfect over rice, mashed potatoes, or noodles.
Ingredients
- 2–2½ lbs boneless, skinless chicken thighs (or breasts)
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tbsp soy sauce (optional, adds depth)
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1 tbsp butter or olive oil
- Optional: 1 tbsp cornstarch + 2 tbsp water (for thickening)
Instructions
- Layer onions in the bottom of the slow cooker. Sprinkle with a little salt.
- Season chicken with salt, pepper, thyme, and paprika. Place on top of onions.
- Add garlic, broth, soy sauce, and butter.
- Cook:
- LOW for 6–7 hours
- HIGH for 3–4 hours
Chicken should be tender and easily shredded.
- Optional thick gravy:
Remove chicken. Stir in cornstarch slurry. Cook on HIGH 10–15 minutes until thickened. Return chicken to coat.

- French onion style: Add 1 tsp Worcestershire and top with shredded Swiss or provolone before serving.
- Creamy version: Stir in 1/2 cup sour cream or heavy cream at the end.
