🍗 Chicken and Cheese Sheet Pan Dinner

A Chicken and Cheese Sheet Pan Dinner is an easy, all-in-one meal where chicken, vegetables, and cheese are baked together on a single sheet pan. It’s fast, minimal cleanup, and flavorful, making it perfect for weeknight dinners.

🥄 Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts or thighs
  • 2 cups assorted vegetables (e.g., bell peppers, zucchini, broccoli, cherry tomatoes)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1–1 1/2 cups shredded cheese (cheddar, mozzarella, or a blend)
  • Optional: fresh herbs (parsley, basil) or red pepper flakes

👩‍🍳 Method

  1. Preheat Oven: 400 °F (200 °C). Line a baking sheet with parchment paper or foil.
  2. Prep Chicken & Veggies: Cut vegetables into bite-sized pieces. Pat chicken dry.
  3. Season: Toss chicken and vegetables with olive oil, garlic powder, paprika, salt, and pepper.
  4. Arrange on Sheet Pan: Spread chicken and vegetables evenly on the pan.
  5. Bake: 20–25 minutes, until chicken is cooked through (165 °F / 74 °C internal temperature) and vegetables are tender.
  6. Add Cheese: Sprinkle shredded cheese over chicken and veggies, then bake an additional 3–5 minutes until melted and bubbly.
  7. Serve: Garnish with fresh herbs or red pepper flakes.

🍴 Tips & Variations

  • Vegetables: Use whatever’s in season — asparagus, cauliflower, or carrots work well.
  • Cheese: For extra flavor, mix mozzarella with parmesan or pepper jack.
  • Marinade Option: Marinate chicken in Italian dressing, lemon juice, or BBQ sauce before baking for extra flavor.
  • Make It Spicy: Add chili powder, smoked paprika, or a drizzle of hot sauce before baking.
  • Meal Prep: Portion into containers — can be refrigerated for 3–4 days.

This dish is versatile, quick, and cheesy, combining protein, veggies, and comfort all in one pan — perfect for busy evenings with minimal cleanup.

If you want, I can also give a “loaded” version with potatoes, peppers, and a golden cheese crust for an extra hearty sheet pan dinner. Do you want me to do that?
