🍗 Chicken and Broccoli Rice

(Serves 4)

Ingredients

  • 2 cups cooked rice (white, brown, or jasmine)
  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 1 cup chicken broth
  • ½ cup shredded cheddar cheese (optional)
  • Salt and pepper, to taste
  • Optional: soy sauce, lemon juice, or red pepper flakes for extra flavor

Instructions

  1. Cook Chicken
    • Heat 1 tablespoon oil in a skillet over medium heat.
    • Add diced chicken, season with salt and pepper, and cook until golden and cooked through (5–7 minutes).
    • Remove and set aside.
  2. Cook Broccoli & Aromatics
    • In the same skillet, add remaining oil.
    • Sauté onion until translucent, then add garlic for 30 seconds.
    • Add broccoli and cook 3–5 minutes until bright green and slightly tender.
  3. Combine with Rice
    • Add cooked rice and chicken back to the skillet.
    • Pour in chicken broth and stir to combine.
    • Cook 3–5 minutes until heated through and slightly saucy.
  4. Add Cheese & Seasoning
    • Sprinkle with cheddar cheese if using, and stir until melted.
    • Taste and adjust salt, pepper, or add optional flavorings.
  5. Serve
    • Serve warm, optionally garnished with parsley or green onions.

🔥 Tips

  • Use leftover rice for best texture; freshly cooked rice can be a bit mushy.
  • For extra flavor, stir in 1 teaspoon soy sauce or a squeeze of lemon juice.
  • Can be made one-pot in a skillet or even baked in the oven with cheese on top.
