🧀🥔 Cheesy Mashed Potato Puffs

A great way to use leftover Mashed Potatoes, these puffs bake up crispy on the outside and soft inside. Perfect as a snack, appetizer, or side dish. 😋


🧾 Ingredients

  • 2 cups Mashed Potatoes
  • 1 cup shredded Cheddar Cheese
  • 2 **Egg**s
  • ¼ cup chopped Green Onions
  • ¼ cup grated Parmesan Cheese
  • Salt and Black Pepper to taste

👩‍🍳 Instructions

1. Preheat oven

  • Heat oven to 200°C (400°F).
  • Lightly grease a muffin tin.

2. Mix ingredients

  • In a bowl, combine mashed potatoes, cheddar cheese, eggs, green onions, Parmesan, salt, and pepper.
  • Mix until smooth and well combined.

3. Fill muffin cups

  • Spoon the mixture into the muffin tin, filling each cup almost to the top.

4. Bake

  • Bake for 20–25 minutes until the tops turn golden and slightly crispy.

5. Serve

  • Let them cool for a few minutes before removing from the tin.

🍽️ Serving Ideas

  • Top with Sour Cream
  • Serve with Ketchup or spicy sauce
  • Sprinkle with fresh Parsley

✅ Tip:
Brush the tops with melted butter before baking to get an extra crispy, golden crust.
