🧀🍔 Cheeseburger Soup (Creamy & Hearty)
Tastes just like a cheeseburger in cozy soup form — rich, cheesy, and filling.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 cup shredded carrots
- 2–3 cloves garlic, minced
- 3 cups diced potatoes (about 2 medium)
- 3 cups chicken broth
- 2 tbsp butter
- 2 tbsp flour
- 1 1/2 cups milk (or half-and-half for richer soup)
- 2 cups shredded sharp cheddar cheese
- Salt and black pepper to taste
Optional toppings: cooked bacon, chopped pickles, diced tomatoes, green onions
Instructions
- Brown the beef:
In a large pot, cook ground beef over medium heat until browned. Drain excess fat. Set aside. - Sauté vegetables:
In the same pot, melt butter. Add onion, carrots, and garlic. Cook 3–4 minutes until softened. - Add potatoes & broth:
Stir in diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer 12–15 minutes, until potatoes are tender. - Make it creamy:
Sprinkle flour over vegetables and stir well. Slowly add milk, stirring constantly to thicken. - Add beef & cheese:
Return beef to pot. Stir in shredded cheddar until melted and smooth. - Season:
Add salt and pepper to taste. Simmer 5 more minutes.
Tips
- For thicker soup: mash some of the potatoes in the pot.
- For extra richness: add 2 oz cream cheese.
- For a true “burger” flavor: stir in 1 tbsp ketchup and 1 tsp mustard.
Storage
- Refrigerate up to 4 days
- Freeze without dairy added (add milk/cheese when reheating)
