- Preheat oven to 350°F (175°C).
- Cook the meat – In a skillet, brown ground beef or chicken. Add taco seasoning and ½ cup water. Stir until cooked and well-coated.
- Layer casserole – In a greased 9×13-inch baking dish:
- A layer of tortilla pieces
- Half the meat mixture
- Half the beans and corn
- Half the cheese
Repeat layers, finishing with cheese on top.
- Bake – 20–25 minutes, until cheese is melted and bubbly.
- Serve – Top with sour cream, cilantro, avocado, or salsa.
