BLT salad

Here’s a fresh and satisfying way to enjoy all the flavors of a BLT (Bacon, Lettuce, Tomato) in salad form:


Ingredients (serves 2–4)

  • 4 cups romaine or mixed lettuce, chopped
  • 6–8 slices bacon, cooked and crumbled
  • 2–3 ripe tomatoes, diced
  • ½ red onion, thinly sliced (optional)
  • ½ cup shredded cheddar or parmesan cheese (optional)
  • Croutons (optional for extra crunch)

For the dressing:

  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice or apple cider vinegar
  • Salt and pepper, to taste

Instructions

  1. Prepare bacon: Cook until crispy, drain on paper towels, and crumble.
  2. Mix the salad: In a large bowl, combine lettuce, tomatoes, red onion, bacon, and cheese (if using).
  3. Make the dressing: Whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  4. Toss & serve: Drizzle dressing over salad and toss gently to coat. Add croutons if desired.

  • For a lighter version: Use Greek yogurt instead of mayonnaise.
  • Add extra flavor: Sprinkle fresh herbs like chives or parsley.
  • Meal prep: Keep bacon and dressing separate until ready to serve to keep lettuce crisp.
