Raspberry Refrigerator Cake

Raspberry Refrigerator Cake is a simple no-bake dessert that chills in the fridge until it becomes soft, creamy, and sliceable. It’s refreshing, fruity, and perfect for warm weather. 🍰🍓


Ingredients

  • 1 box graham crackers (or digestive biscuits)
  • 1 cup fresh raspberries (or raspberry pie filling)
  • 1 package (8 oz / 225 g) cream cheese, softened
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Make the Cream Filling
    In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
    In another bowl, whip the heavy cream until soft peaks form.
    Gently fold the whipped cream into the cream cheese mixture.
  2. Layer the Cake
    In a dish (8×8 inch works well):

    • Layer graham crackers on the bottom.
    • Spread a layer of cream filling.
    • Add raspberries.
  3. Repeat Layers
    Continue layering crackers, cream, and raspberries until ingredients are used.
    Finish with cream and a few raspberries on top.
  4. Refrigerate
    Cover and refrigerate for at least 4–6 hours (overnight is best).
    The crackers soften and turn cake-like.
  5. Serve
    Slice and serve chilled.

Tips

  • Add raspberry jam between layers for stronger flavor.
  • You can drizzle melted white chocolate on top.
  • Works well with other berries like strawberries or blueberries.
