Roasted Pork Tenderloin

Ingredients (serves 4)

  • 1–1.5 lbs (450–680 g) pork tenderloin
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary or thyme (optional)
  • 1 tablespoon Dijon mustard (optional, for glaze)
  • 1 tablespoon honey or maple syrup (optional, for glaze)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the pork:
    • Pat the tenderloin dry with paper towels.
    • Rub with olive oil, garlic, salt, pepper, and herbs.
  3. Sear the pork (optional but recommended for flavor):
    • Heat a skillet over medium-high heat and sear the tenderloin on all sides for 2–3 minutes.
  4. Roast:
    • Transfer the pork to a baking dish (or leave in skillet if oven-safe).
    • Roast for 20–25 minutes, or until internal temperature reaches 145°F (63°C).
  5. Optional glaze:
    • Mix Dijon mustard and honey, brush over pork during the last 5–10 minutes of roasting for a sweet-savory crust.
  6. Rest and slice:
    • Let the pork rest for 5–10 minutes before slicing. Serve with roasted vegetables or a light sauce.

Tips

  • Pork tenderloin is very lean, so avoid overcooking—it can dry out quickly.
  • Slice against the grain for maximum tenderness.
  • Pair with a balsamic glaze or apple sauce for a classic flavor combination.
