Harvard Beets

Posted on March 4, 2026March 4, 2026 by Admin

Harvard Beets are a classic American side dish made from cooked beets in a sweet and tangy sauce. They’re named after the Harvard University dining tradition, but the dish itself is enjoyed widely in home cooking.

Ingredients (Typical for 4 servings)

  • 2 cups cooked and sliced or diced beets (fresh, canned, or roasted)
  • 2–3 tbsp butter
  • 2–3 tbsp sugar (or honey for a natural alternative)
  • 2 tbsp vinegar (white or apple cider)
  • Salt and pepper to taste
  • Optional: a pinch of ground cloves or cinnamon for extra warmth

Cooking Method

  1. Prepare the sauce:
    • In a skillet, melt butter over medium heat
    • Add sugar and vinegar, stirring until sugar dissolves
    • Simmer briefly to combine
  2. Add beets:
    • Stir in the cooked beets
    • Simmer for 5–10 minutes, allowing the beets to absorb the sweet-tangy glaze
  3. Season & serve:
    • Add salt and pepper to taste
    • Serve warm as a side dish

Tips

  • Use fresh or roasted beets for a more natural flavor than canned
  • Adjust sweetness or tanginess by balancing sugar and vinegar to your preference
  • Make-ahead: Can be prepared a day in advance and gently reheated
  • Variation: Some recipes include sautéed onions or a splash of orange juice for extra depth

Harvard Beets are vibrant, sweet, and tangy, making them a classic accompaniment to meats, roasts, or holiday meals.

I can also give a step-by-step recipe with exact measurements and optional flavor twists if you want.
