🍞 Tomato & Cottage Cheese Toast

🧾 Ingredients (for 2 servings):

  • 2 slices of whole grain, sourdough, or rye bread

  • ½ cup cottage cheese (low-fat or full-fat, your choice)

  • 1–2 ripe tomatoes, sliced thinly or cherry tomatoes halved

  • 1 tbsp extra virgin olive oil (optional)

  • Salt and freshly ground black pepper, to taste

  • Optional toppings:

    • Fresh herbs: basil, chives, parsley, or dill

    • Sprinkle of chili flakes or everything bagel seasoning

    • A drizzle of balsamic glaze or hot honey

    • Toasted pumpkin seeds or sunflower seeds for crunch


🔪 Instructions:

  1. Toast the bread
    Toast the slices of bread until golden and crisp.
