Slow Cooker Chicken with Tomato Basil Soup

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (28 oz) crushed tomatoes
  • 1 cup chicken broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried basil (or 2 tbsp fresh chopped basil)
  • 1 tsp dried oregano (optional)
  • Salt & pepper to taste
  • 1/2 cup heavy cream or coconut cream (optional, for creamier soup)
  • Fresh basil for garnish

Instructions

  1. Prepare the Slow Cooker
    • Spray or lightly grease the inside of the slow cooker.
  2. Layer Ingredients
    • Place chicken breasts at the bottom.
    • Add onion, garlic, crushed tomatoes, chicken broth, and dried herbs.
    • Season with salt and pepper.
  3. Cook
    • Cover and cook:
      • Low: 6–7 hours
      • High: 3–4 hours
    • Chicken should be fully cooked (165°F internal).
  4. Shred the Chicken
    • Remove chicken, shred with two forks, and return to the slow cooker.
  5. Optional Creamy Version
    • Stir in heavy cream for a richer, creamier soup.
  6. Serve
    • Ladle soup into bowls, garnish with fresh basil, and serve with crusty bread or a side salad.

Tips

  • Add Vegetables: Carrots, celery, or bell peppers for extra nutrition.
  • Spicy Version: Add a pinch of red pepper flakes.
  • Make Ahead: Soup tastes even better the next day as flavors meld.
