White Chocolate Strawberry Cheesecake

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • 6 tablespoons unsalted butter, melted

  • 16 oz (450g) cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 8 oz white chocolate, melted and slightly cooled

  • 1 teaspoon vanilla extract

  • ½ cup sour cream or heavy cream

  • 1 ½ cups fresh strawberries, chopped (plus extra for topping)

For the topping:

  • ½ cup strawberry glaze or strawberry preserves (optional)

  • Fresh strawberries, sliced


Instructions:

  1. Prepare the crust:
    Preheat oven to 325°F (160°C).
    In a medium bowl, combine graham cracker crumbs, sugar, and melted butter until evenly moistened.
    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.

  2. Make the filling:
    In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
    Add eggs one at a time, beating well after each addition.
    Stir in melted white chocolate and vanilla extract until fully combined.
    Mix in sour cream (or heavy cream) until smooth.
    Gently fold in chopped strawberries.

  3. Bake:
    Pour filling over the cooled crust.
    Bake for about 50–60 minutes, or until the center is set but still slightly jiggly.
    Turn off oven and leave the cheesecake inside with the door slightly ajar for 1 hour (helps prevent cracking).
    Remove from oven and cool completely at room temperature, then refrigerate for at least 4 hours or overnight.

  4. Add topping and serve:
    Spread strawberry glaze or preserves over the top if using.
    Garnish with fresh sliced strawberries before serving.
