  • 1 cup caramel candies (or soft caramel squares)

  • 2 tablespoons heavy cream

For the chocolate topping:

  • 1 ½ cups semi-sweet chocolate chips

  • 1 teaspoon vegetable oil or butter (optional, for smoother chocolate)

Instructions:

  1. Make the cookie base:

    • Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.

    • In a large bowl, cream the butter and sugar until light and fluffy.

    • Beat in the egg and vanilla extract.

    • In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.

    • Press the dough evenly into the prepared baking pan.

  2. Bake the base:
Bake for about 18–20 minutes, until the edges are golden but the center is still soft. Remove from oven and set aside.

  3. Add caramel layer:

    • While the base is baking, melt caramel candies with heavy cream in a small saucepan over low heat, stirring until smooth.

    • Spread the warm caramel evenly over the hot cookie base. Let it cool slightly.

  4. Add chocolate topping:

    • Melt chocolate chips with vegetable oil or butter in a microwave-safe bowl or double boiler until smooth.

    • Pour the chocolate over the caramel layer, spreading evenly.

  5. Chill and set:
Refrigerate the entire pan for at least 2 hours or until the chocolate is firm.

  6. Slice and serve:
Once set, cut into bars or squares and enjoy!
