🇹🇷 Turkish Bread (Pide)

Turkish bread, often called pide ekmeği, is a soft, slightly chewy flatbread with a golden crust—famous for its dimpled pattern and sesame topping. It’s commonly served with kebabs, dips, or during Ramadan.


đź«“ Classic Turkish Pide Bread Recipe

Ingredients

  • 3 ½ cups (440g) all-purpose flour
  • 1 packet (2 ÂĽ tsp) active dry yeast
  • 1 tsp sugar
  • 1 ÂĽ cups warm water
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1 egg yolk + 1 tbsp yogurt (for glaze)
  • Sesame seeds & nigella seeds (optional topping)

  1. Activate yeast
    Mix warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. Make dough
    Add flour, salt, and olive oil. Knead 8–10 minutes until smooth and elastic.
  3. First rise
    Cover and let rise 1 hour until doubled.
  4. Shape
    Press dough into a round or oval about ½–¾ inch thick on a lined baking tray.
    Use your fingers to create the traditional crisscross indent pattern.
  5. Second rise
    Let rest 20–30 minutes.
  6. Glaze & top
    Mix egg yolk + yogurt and brush over the top. Sprinkle sesame and nigella seeds.
  7. Bake
    Bake at 425°F (220°C) for 12–15 minutes until golden brown.

🔥 Tips for Authentic Texture

  • Place a small pan of water in the oven for steam (helps create a soft interior).
  • Don’t overbake—Turkish bread should stay soft, not crusty like baguette.
  • Brush lightly with olive oil after baking for extra softness.

🍽️ Serve With

  • Hummus or baba ghanoush
  • Grilled meats (kebabs)
  • Shakshuka
  • Olive oil & za’atar
