🍰 Classic Sponge Cake Recipe

Ingredients (8-inch cake)

  • 4 large eggs
  • 1 cup (200g) granulated sugar
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ cup (60ml) milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven & prepare pan
    • Preheat oven to 350°F (175°C).
    • Grease an 8-inch round cake pan and line with parchment paper.
  2. Beat eggs and sugar
    • In a large bowl, whisk eggs and sugar until light, fluffy, and pale (5–7 minutes using an electric mixer).
  3. Sift dry ingredients
    • Combine flour, baking powder, and salt in a bowl.
    • Gradually fold into the egg mixture gently to keep it airy.
  4. Add milk, butter, and vanilla
    • Warm milk slightly and mix with melted butter and vanilla.
    • Fold gently into the batter until smooth.
  5. Bake the cake
    • Pour batter into prepared pan.
    • Bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool & serve
    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
    • Optional: dust with powdered sugar, frost, or serve with fresh fruit.

💡 Tips for Extra Fluffiness

  • Beat eggs well until thick and pale—this is what makes it airy.
  • Fold flour gently to avoid deflating the batter.
  • Room temperature eggs give a better rise.
  • You can split the cake horizontally for a layered sponge with cream or jam.
