Southern Fried Green Tomatoes Recipe

Ingredients (Serves 4)

  • 3 to 4 firm green tomatoes

  • Salt and black pepper

  • ½ cup all-purpose flour

  • 2 eggs

  • ¼ cup buttermilk (or regular milk if needed)

  • ½ cup cornmeal

  • ½ cup breadcrumbs (or more cornmeal if preferred)

  • ½ teaspoon paprika (optional)

  • Vegetable oil for frying (such as canola or peanut oil)


Instructions

Step 1: Prepare the tomatoes

  1. Wash the green tomatoes.

  2. Slice them into ¼ to ½ inch thick rounds.

  3. Lay the slices on a tray or paper towels.

  4. Lightly sprinkle both sides with salt.

  5. Let them sit for about 10 to 15 minutes to draw out excess moisture, then pat dry.

Step 2: Set up the breading station

  1. Place the flour in one shallow bowl or plate.

  2. In a second bowl, beat the eggs and mix with the buttermilk.

  3. In a third bowl, combine cornmeal, breadcrumbs, paprika (if using), and some salt and pepper.

Step 3: Bread the tomato slices

  1. Dredge each tomato slice in flour, coating both sides lightly.

  2. Dip it into the egg and buttermilk mixture.

  3. Press it into the cornmeal and breadcrumb mixture, coating well.

  4. Set the breaded slices aside on a tray. Repeat with all slices.

Step 4: Heat the oil

  1. Pour about ½ inch of oil into a heavy skillet (cast iron works best).

  2. Heat over medium to medium-high heat until the oil reaches about 180°C (350°F), or until a small crumb sizzles immediately when dropped in.

Step 5: Fry the tomatoes

  1. Carefully place a few breaded tomato slices in the hot oil without crowding the pan.

  2. Fry for about 2 to 3 minutes per side, or until golden brown and crispy.

  3. Use tongs or a slotted spoon to flip and remove the tomatoes.

Step 6: Drain and serve

  1. Place fried slices on a plate lined with paper towels to drain excess oil.

  2. Repeat with the remaining tomato slices.

  3. Serve hot.

  • Serve with remoulade, ranch dressing, or spicy mayo.

  • Excellent as a side dish, in sandwiches, or on top of salads.
