These are classic, easy to make, and perfect for breakfast, snacks, or dessert.


Soft Vanilla Muffins Recipe

Ingredients (Makes 12 muffins)

  • 250 grams (2 cups) all-purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 150 grams (¾ cup) granulated sugar

  • 2 large eggs (room temperature)

  • 120 milliliters (½ cup) vegetable oil or melted butter

  • 240 milliliters (1 cup) milk (room temperature)

  • 2 teaspoons vanilla extract


Instructions

Step 1: Preheat the oven

  1. Preheat your oven to 180°C (350°F).

  2. Line a 12-cup muffin tin with paper liners or grease it lightly.

Step 2: Mix dry ingredients

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

  2. Set aside.

Step 3: Mix wet ingredients

  1. In another bowl, whisk together the sugar, eggs, oil (or melted butter), milk, and vanilla extract until smooth and well combined.

Step 4: Combine wet and dry

  1. Pour the wet mixture into the bowl with the dry ingredients.

  2. Gently fold the mixture using a spatula or whisk until just combined.

  3. Do not overmix. The batter should be slightly lumpy.

Step 5: Fill the muffin tin

  1. Divide the batter evenly between the 12 muffin cups, filling each about three-quarters full.

Step 6: Bake

  1. Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

  2. The tops should be lightly golden.

Step 7: Cool and serve

  1. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

  2. Serve plain or dusted with powdered sugar.


Optional Add-ins

  • Chocolate chips

  • Blueberries

  • Lemon zest

  • Sprinkles for a funfetti version


Storage

  • Store in an airtight container at room temperature for up to 3 days.

  • Freeze for up to 2 months. Thaw at room temperature or warm slightly before serving.
