🧾 Ingredients:

For the pork chops:

  • 4 bone-in or boneless pork chops, about ¾–1 inch thick

  • Salt & black pepper

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 2 tbsp flour (for dredging)

  • 2 tbsp oil or butter for searing

For the potatoes:

  • 3–4 medium gold or red potatoes, sliced thin or into wedges

  • Salt & pepper to taste

  • (Optional) 1 tsp Italian seasoning or rosemary

For the onion gravy:

  • 1 medium onion, thinly sliced

  • 2 cloves garlic, minced

  • 2 tbsp flour

  • 2 cups chicken broth or beef broth

  • ½ cup milk or heavy cream (for creamy version)

  • 1 tsp Worcestershire sauce

  • (Optional) Fresh thyme or parsley for garnish


👨‍🍳 Instructions:

1. Season and sear pork chops:

  • Pat pork chops dry. Season both sides with salt, pepper, paprika, and garlic powder.

  • Lightly dredge each chop in flour.

  • Heat oil in a large oven-safe skillet or Dutch oven over medium-high heat.

  • Sear chops 2–3 minutes per side until browned (not cooked through). Set aside.

2. Sauté onions & garlic:

  • In the same pan, lower heat to medium. Add sliced onions.

  • Cook 5–7 minutes until golden and soft, then stir in garlic and cook 1 minute more.

3. Make the gravy:

  • Sprinkle in 2 tbsp flour and stir to coat the onions (it’ll look pasty).

  • Slowly whisk in broth and Worcestershire sauce, scraping up browned bits.

  • Stir in milk or cream if using.

  • Simmer for 5 minutes until thickened slightly. Taste and adjust salt/pepper.

4. Assemble & bake:

  • Layer sliced potatoes evenly in the skillet (on top or slightly under the onions).

  • Nestle pork chops on top of the potatoes.

  • Spoon some gravy over the chops.

5. Bake:

  • Cover the skillet tightly with foil or a lid.

  • Bake at 180°C / 350°F for 35–40 minutes, or until potatoes are fork-tender and pork is cooked through (internal temp 63°C / 145°F).

  • Uncover for the last 5–10 minutes if you want to thicken the gravy more.
