🥘 Sausage, Green Bean, and Potato Casserole

A hearty, comforting one-dish meal with savory sausage, tender green beans, and soft potatoes baked in a creamy, cheesy sauce.


Ingredients

  • 1 lb sausage (Italian or breakfast sausage, casings removed if necessary)
  • 4 cups potatoes, peeled and diced (Yukon Gold or Russet)
  • 3 cups green beans, trimmed and cut into 2-inch pieces (fresh or frozen)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 2 tbsp butter
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Optional: ½ cup breadcrumbs or crushed crackers for topping

Instructions

1. Preheat Oven

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish.

2. Cook Sausage

  • In a large skillet, cook sausage over medium heat until browned and cooked through.
  • Remove and set aside.

3. Sauté Vegetables

  • In the same skillet, add butter, onion, and garlic. Sauté until translucent (3–5 minutes).
  • Add green beans and cook 3–4 minutes until slightly tender.

4. Combine Ingredients

  • In a large bowl, mix cooked sausage, sautéed vegetables, diced potatoes, cream, thyme, salt, and pepper.
  • Stir in half of the shredded cheese.

5. Assemble Casserole

  • Pour mixture into the prepared baking dish.
  • Top with remaining cheese and optional breadcrumbs/crackers.

6. Bake

  • Cover with foil and bake 35–40 minutes until potatoes are tender.
  • Remove foil and bake an additional 10 minutes for a golden top.

7. Serve

  • Let rest 5 minutes before serving.
  • Pairs well with a crisp green salad or crusty bread.

Tips

  • For faster cooking, parboil potatoes for 5 minutes before assembling.
  • Swap heavy cream for a cheese sauce for extra richness.
  • Use smoked sausage for a deeper, savory flavor.
