Roast beef is a classic dish made by cooking a beef roast in the oven or slow cooker until tender. It can be served hot with sides or thinly sliced for sandwiches.

  • 2–3 lbs (900–1350 g) beef roast (top sirloin, ribeye, or rump roast)

      • Rare: 125°F (52°C)
      • Medium: 135°F (57°C)

  4. Rest the meat:
    • Let roast rest 10–15 minutes before slicing. This keeps juices in the meat.
  5. Serve:
    • Slice thin for sandwiches or thick for a plated meal.
    • Serve with gravy, roasted vegetables, or horseradish sauce.

  • Use a meat thermometer for accurate doneness.
  • For extra flavor, marinate beef overnight in olive oil, garlic, and herbs.
  • Leftover roast beef can be used in sandwiches, salads, or stir-fries.
