Here’s a sweet and savory Pineapple Bake recipe — often served as a holiday side dish or brunch casserole, especially in Southern cooking. It’s warm, buttery, and full of pineapple flavor — somewhere between a dessert and a casserole!

🍍 Classic Pineapple Bake

🕒 Time:

  • Prep: 10 minutes

  • Bake: 30–35 minutes
    🍽 Serves: 6–8

🧾 Ingredients:

  • 1 (20 oz) can crushed pineapple, undrained

  • ½ cup (1 stick) unsalted butter, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 5 slices white sandwich bread, torn into small pieces

  • 1 tsp vanilla extract

  • Pinch of salt

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C).
Grease a medium baking dish (about 8×8 or 9-inch round).

  2. Mix wet ingredients:
In a large bowl, cream together the butter and sugar until fluffy.
Beat in the eggs one at a time, then stir in vanilla.

  3. Add pineapple and bread:
Stir in the undrained crushed pineapple.
Gently fold in torn bread pieces until well combined.

  4. Bake:
Pour into the prepared dish and bake for 30–35 minutes, or until golden brown on top and set in the center.

  5. Cool slightly & serve warm.
It’s delicious on its own or as a sweet side to ham, turkey, or pork.

🍽 Serving Ideas:

  • Holiday table side dish (pairs beautifully with glazed ham)

  • Warm brunch casserole with eggs and bacon

  • Dessert topped with a scoop of vanilla ice cream

🔁 Variations:

  • Add ½ tsp cinnamon or nutmeg for extra warmth

  • Top with a light brown sugar crumble for texture

  • Use Hawaiian rolls or brioche instead of sandwich bread for richness

  • Add chopped pecans for crunch
